About thirty participants connected yesterday, March 9, to the IV Conference on Nutrition and Health organized by the Cluster Foodservice. The conference was dedicated to the application of the omic sciences to nutrition and featured presentations by various experts in the field.
To begin with, Ignasi Papell and Josep M del Bas, from Eurecat, introduced the concept of omic sciences, defining them as the set of disciplines linked to biochemistry and molecular biology, through which knowledge about our body can be obtained analyzing the overall content of a biological sample (set of genes, proteins, etc.). The applications of the omic sciences in food include possibilities such as personalized nutrition, mechanisms of biological efficiency, the characterization and screening of ingredients and products or food safety.
Afterwards, Javier Ojuel, from Alimmenta, presented the Metagendiet project, which seeks to develop an expert artificial intelligence system for carrying out personalized diets based on genetic and metabolomic information. The aim is to draw up a nutritional plan that takes into account factors such as genetics, the environment, habits and health history.
Eurecat also presented the PREVENTOMICS project, which has the participation of Aldi and Grupo Carinsa. The project wants to change the person’s metabolism before health problems appear by using technology. A questionnaire asks the user’s habits, followed by an analysis of saliva, blood and urine. With this, about sixty indicators are obtained to study and generate adequate nutritional advice. The project can be applied in supermarkets, to make the shopping list, or in restaurants, to demand pre-cooked food and recipes.
Finally, Teresa Tarragó and Pol Cervera presented Exheus, an RNA test that analyzes how food affects your body. Through a blood draw, gene expression is analyzed and a report is generated on how gene expression is at that time and a series of recommendations for redirecting unhealthy habits.
After the speakers’ interventions, there was an open debate on the subject, in which those present were able to resolve doubts and concepts.
