Day of Optimization in Energy and Water Management in the Foodservice Sector

On March 25 took place the Day of Optimization in Energy and Water Management in the Foodservice Sector, where more than fifty people participated, representing entities of the Efficient Energy Cluster of Catalonia ( CEEC), the Catalan Water Partnership (CWP) and the Foodservice Cluster.

During the first part of the day, the presentation of several projects and initiatives of sustainability were carried out in the food sector by the CEEC and the CWP took place.

Then Ramon Arcas explained the trajectory of Frit Ravich and his projects of sustainable development, including the photovoltaic park, the largest photovoltaic installation in Girona.

Pedro Ruiz, presented the responsible water management in Nestlé, the relevance of sustainability and the commitment of the entity with the planet, as well as the example of the factory of La Penilla and the future of water in the factories

The second part focused on an interactive activity to work on the challenges of the food sector that shared the companies associated with the Foodservice cluster, through the manual thinking where the companies of the CEEC and the CWP cluster exposed the opportunities for improvement that exist.

The main challenges for manufacturers related to water management, revolved around the reuse and recirculation of water, the identification of improvements to reduce costs and improve water quality, optimize protocols of cleaning and improving the maintenance of the facilities. In the case of restaurateurs, they referred to the monitoring and optimization of consumption, the conditioning of water and the opportunities of gray water, as well as the development of tools such as the water footprint for sustainability benchmarking.
